This Air Fryer Chicken Burrito Bowl is a flavorful, healthy meal featuring tender chipotle-spiced chicken thighs cooked to perfection in the air fryer. Served over rice with black beans, fresh shredded lettuce, creamy avocado slices, and zesty salsa, it’s a quick and easy dish perfect for a satisfying lunch or dinner.

Ingredients

Scale

Chicken Marinade

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 3 garlic cloves, minced
  • 1/21 Tablespoon chipotle peppers in adobo sauce
  • 1/21 teaspoon ancho chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • 1 lime, juiced

Bowl Ingredients

  • Rice, for serving
  • Black beans, for serving
  • Shredded lettuce, for serving
  • Avocado, sliced, for serving
  • Salsa, for serving

Instructions

  1. Prepare the Marinade: In a large bowl, combine the chicken thighs, kosher salt, black pepper, minced garlic, chipotle peppers in adobo sauce, ancho chile powder, ground cumin, dried oregano, and olive oil. Mix thoroughly to ensure the chicken is evenly coated with the seasoning mixture.
  2. Preheat the Air Fryer: Place the crisper plate into the COSORI air fryer basket. Select the preheat function and set the temperature to 385°F (196°C). Tap start/pause to begin preheating.
  3. Cook the Chicken: Once preheated, arrange the marinated chicken thighs evenly on the crisper plate inside the air fryer basket. Select the air fryer function, set the timer to 16 minutes, and start cooking. Air fry until the chicken is cooked through and nicely browned.
  4. Rest and Slice the Chicken: Remove the cooked chicken thighs from the air fryer. Immediately squeeze fresh lime juice over the top to enhance the flavor. Allow the chicken to rest for 5 minutes to retain juices, then slice into bite-sized pieces.
  5. Assemble the Burrito Bowl: Serve the sliced chipotle chicken over a bed of rice and black beans. Top with shredded lettuce, sliced avocado, and your favorite salsa to complete a delicious and balanced burrito bowl.

Notes

  • Adjust the amount of chipotle peppers and chile powder according to your desired spice level.
  • Use white, brown, or cauliflower rice as per dietary preferences.
  • Black beans can be canned or homemade; rinse canned beans to reduce sodium.
  • If you don’t have an air fryer, you can bake the chicken at 400°F for 20-25 minutes, flipping halfway through.
  • Allowing the chicken to rest helps keep it juicy and tender.
