Ingredients
Scale
Base Ingredients
- 1.5 cups Cottage cheese (low-fat or full fat)
- 4 large Eggs
- 1 cup Rolled old-fashioned oats
- 1 Banana
- 1/3 cup Maple syrup
- 1 tsp Baking soda
Topping
- 1 cup Blueberries (fresh or frozen)
Instructions
- Preheat and Prepare Baking Dishes: Preheat your oven to 350°F (175°C). Lightly spray two 2-cup glass bowls with non-stick spray and place them on a large baking sheet for stability during baking.
- Blend Ingredients: In a high-powered blender, combine the cottage cheese, eggs, oats, banana, maple syrup, and baking soda. Blend until the mixture is completely smooth, which may take a few minutes to ensure a creamy consistency. If the batter is too thick, add a small amount of milk to thin it slightly.
- Pour Batter and Add Blueberries: Evenly distribute the batter between the prepared bowls, filling them more than halfway. Top each portion with the blueberries. For best results, use frozen blueberries to prevent them from sinking, or alternatively, add the blueberries halfway through baking at about the 15-minute mark.
- Bake: Place the baking sheet with the bowls in the preheated oven. Bake for 35–40 minutes, checking for doneness by looking for a golden brown top, puffed-up appearance, and firm texture when touched. Baking time may extend up to 45 minutes depending on your oven.
- Cool and Serve: Remove the bowls from the oven and allow them to cool and set for at least 10 minutes before serving. These bowls can also be covered with lids and refrigerated for up to 1 week, making them perfect for meal prep and to enjoy later.
Notes
- You can use either low-fat or full-fat cottage cheese depending on your preference.
- Frozen blueberries are recommended to prevent sinking during baking.
- If batter is overly thick, add a bit of milk to reach desired consistency for blending.
- Adjust baking time based on your oven’s characteristics, checking for a firm and golden top.
- These breakfast bowls store well in the refrigerator for up to one week, making them ideal for meal prep.
