- 15 tablespoons basmati rice (3 tablespoons per container)
- 1.25 cups chicken broth (0.25 cup per container)
- 10 tablespoons light mayo (2 tablespoons per container)
- 10 tablespoons sweet chili sauce (2 tablespoons per container)
- 5 tablespoons Sriracha (about 1 tablespoon per container plus extra if desired)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and arrange 5 oven-safe containers on a cookie sheet to make transportation in and out of the oven easier.
- Season Chicken: Dice the chicken breast into bite-sized pieces. In a bowl, toss the chicken with garlic powder, onion powder, chili powder, salt, and pepper until evenly coated.
- Prepare Rice Mixture: In each container, add 3 tablespoons of basmati rice, 2 tablespoons of light mayo, 2 tablespoons of sweet chili sauce, a squirt of Sriracha (about 1 tablespoon), and ¼ cup of chicken broth. Stir well to combine the ingredients thoroughly.
- Assemble: Top each rice mixture in the containers with 5 ounces of the seasoned diced chicken, spreading it evenly over the rice mixture.
- Bake: Place the cookie sheet with the containers in the oven and bake for 35 to 40 minutes, or until the rice is fully cooked and the chicken is tender.
- Cool and Store: Remove the containers from the oven and let them cool before covering with lids. Store them in the refrigerator for meal prep convenience.
- Reheat: When ready to eat, reheat each container in the microwave for 2 to 3 minutes until hot throughout. Optionally, use additional mayo, sweet chili, and Sriracha as a topping for extra sauciness.
