  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon coarse Kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

Once simmering, reduce the heat to low and let it cook until it thickens and reduces by about half. Remove from heat and allow it to cool to room temperature; the glaze will continue to thicken as it cools. This glaze can be stored in the refrigerator for up to 2 weeks.
  2. Assemble the Salad: Arrange alternating slices of tomato, fresh mozzarella, and whole basil leaves on a large platter, creating a colorful, layered presentation. Drizzle the olive oil evenly over the top and sprinkle with coarse Kosher salt and freshly ground black pepper to taste.
