- 4 large flour tortillas
- 1.5 cups shredded cheddar cheese
- 1 cup chopped rotisserie chicken or any precooked boneless chicken
- 6 pieces of crispy bacon, cooked and chopped

- 4 tablespoons ranch dressing, plus more for serving
- 2 tablespoons oil or butter (such as olive oil or vegetable oil)

Instructions
- Assemble the Quesadilla: Place one tortilla on a cutting board and sprinkle a half cup of shredded cheddar cheese evenly over it. Layer half of the chopped rotisserie chicken, half of the cooked bacon pieces, and half of the diced scallions on top. Drizzle about 2 tablespoons of ranch dressing over the filling. Add another half cup of shredded cheddar cheese on top and then cover with a second tortilla to form a sandwich.
- Heat the Pan: Place a large frying pan on medium heat and add the oil or butter. Swirl the oil around the pan to coat the surface evenly, ensuring the quesadilla will cook evenly and not stick.
- Cook the Quesadilla: Carefully place the assembled quesadilla into the hot pan. Cook for 2 to 5 minutes on one side until the bottom tortilla is crispy and golden brown and the cheese begins to melt. Use a spatula to carefully flip the quesadilla over and cook for an additional 2 to 3 minutes until the second side is also golden and the cheese inside is fully melted.
- Finish and Season: Remove the quesadilla from the pan and immediately sprinkle a little salt over it while it is still hot to enhance the flavors.
- Repeat and Serve: Repeat the assembly and cooking process with the remaining ingredients to make the second quesadilla. Serve both quesadillas warm with extra ranch dressing, salsa, and pickled jalapenos on the side if desired.
