Description

These Chocolate Covered Strawberry Brownies are a delightful twist on classic brownies, topped with fresh strawberries and a rich, glossy chocolate ganache. Perfect for dessert lovers who want a beautiful and delicious treat, combining the fudgy texture of brownies with the freshness of berries and smooth chocolate topping.

Ingredients

Scale

Brownies

  • 1 Brownie Mix (for an 8″x8″ baking dish)

Fruit

  • 1 lb Strawberries, stems removed, cut in half

Chocolate Ganache

  • 1½ cups Semi Sweet Chocolate Chips (or use part dark chocolate)
  • ¾ cup Heavy Cream (up to 1 cup if more is needed)

Instructions

  1. Prepare Brownies: In an 8″x8″ baking dish, prepare the brownies according to the package directions. Once baked, allow them to cool completely to set the base for the toppings.
  2. Prep Strawberries: Remove the stems from the strawberries and cut them in half lengthwise. Arrange the strawberries in a single layer on top of the cooled brownie layer, with the seed side facing up for an appealing presentation.
  3. Make Chocolate Ganache: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave for 25 seconds and stir slowly. Microwave again for 20 seconds and stir continuously for at least 20 seconds to help the chocolate melt evenly. If chunks remain, continue microwaving in 15-second intervals, stirring after each until the ganache is smooth, dark, and glossy.
  4. Assemble and Chill: Pour the chocolate ganache evenly over the strawberries, ensuring all are covered. Place the brownies in the refrigerator for 20-30 minutes to chill, allowing the ganache to firm up without becoming solid.
  5. Serve: Slice the brownies carefully and serve within a day. For best results, consume the same day as the moisture from the berries can make the brownies soggy.

Notes

  • This recipe also works well with raspberries and blueberries as an alternative topping.
  • Ensure the ganache is not overheated to maintain its glossy texture.
  • Chill brownies to set the ganache but do not freeze to preserve the fresh berry texture.
