  • 3 Tablespoons melted and cooled coconut oil
  • 3 Tablespoons pure maple syrup

For the Peanut Butter Layer:

  • 3/4 cup roasted salted peanuts, roughly chopped
  • 3/4 cup creamy peanut butter
  • 1/3 cup pure maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • A dash of sea salt

For the Chocolate Layer:

  • 3/4 cup dairy-free/vegan chocolate chips
  • 1 Tablespoon coconut oil

Instructions

  1. Shortbread Base: Preheat oven to 350°F. Combine almond flour, coconut oil, maple syrup, vanilla, and salt. Press into a pan and bake.
  2. Peanut Butter Layer: Sprinkle peanuts over cooled crust. Heat peanut butter, maple syrup, coconut oil, vanilla, and salt, then pour over peanuts.
  3. Chocolate Layer: Melt chocolate chips with coconut oil and pour over the peanut butter layer. Chill until set. Cut into bars and enjoy!

Notes

  • For a nut-free version, you can try using sunflower seed butter and sunflower seeds instead of peanut butter and peanuts.
