Description

Creamy Bacon Chicken is a flavorful and comforting skillet dish featuring crispy bacon, tender chicken cutlets, and a rich creamy sauce made with chicken broth, lemon juice, and heavy cream. This easy-to-make recipe combines savory bacon fat for cooking and a luscious sauce to create a satisfying meal perfect for weeknight dinners.

Ingredients

Scale

Bacon

  • 6 strips bacon

Chicken

  • 2 large chicken breasts (cut in half lengthwise to make 4 cutlets)
  • Flour for dredging
  • 1/4 teaspoon garlic powder
  • Pepper to taste

Sauce

  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1 tablespoon butter
  • 1 cup heavy/whipping cream

Instructions

  1. Cook Bacon: Cut the bacon into small pieces using kitchen shears and add it to a skillet. Fry over medium-high heat for about 10 minutes until crispy. Remove the bacon and place on a paper towel-lined plate, leaving approximately 2 tablespoons of bacon fat in the skillet.
  2. Prepare Chicken: Cut the chicken breasts in half lengthwise to create 4 smaller cutlets. Season them with garlic powder and pepper, then coat each piece in flour.
  3. Cook Chicken: Heat the skillet with bacon fat over medium-high heat. Add the floured chicken cutlets and cook for 4-5 minutes per side until golden brown. If the skillet splatters excessively, reduce the heat. Once browned, remove the chicken and set aside.
  4. Make Sauce Base: Add chicken broth, lemon juice, and butter to the skillet. Bring to a bubble and let the liquid reduce by half, approximately 3-4 minutes.
  5. Add Cream and Combine: Stir in the heavy cream and heat until it begins to bubble. Return the cooked chicken and crispy bacon to the pan.
  6. Simmer and Finish: Cook everything together for about 5 minutes until the chicken is fully cooked through and the sauce is reduced and thickened to your preference.

Notes

  • The 5-minute prep time includes cutting the bacon; other prep occurs during cooking.
  • Use large boneless, skinless chicken breasts as they are cut lengthwise. For smaller breasts, use 4 whole breasts without cutting.
  • Cooking times may vary slightly based on stove power and skillet type.
  • Adjust seasoning with additional pepper or salt depending on bacon saltiness.
