Instructions
- Prepare Chicken: Place the trimmed boneless, skinless chicken thighs into the slow cooker evenly.
- Make Sauce: In a medium mixing bowl, whisk together the light brown sugar, soy sauce, bourbon whisky, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic until well combined.
- Combine Chicken and Sauce: Pour the sauce mixture over the chicken thighs in the slow cooker, ensuring the chicken is mostly covered.
- Slow Cook: Cover the slow cooker and cook on high for 4 hours or on low for 6 hours until the chicken is tender and fully cooked.
- Chop Chicken: Remove the cooked chicken thighs to a plate and roughly chop them into bite-sized pieces for easier serving.
- Prepare Thickener: In a small bowl, mix the cornstarch and water until the cornstarch is fully dissolved to create a slurry.
