Ingredients
Scale
Dry Ingredients
- 1 cup all-purpose flour
- 1 cup white whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
Wet Ingredients
- 3 ripe mashed bananas (about 1 ½ cup)
- ¼ cup coconut oil, melted
- ¾ cup sugar
- 2 eggs
- ⅓ cup plain Greek yogurt (full-fat recommended)
Dulce de Leche
- 3 tablespoons dulce de leche, plus 1 tablespoon for topping
Instructions
- Preheat Oven: Set your oven to 350ºF (175ºC) to prepare for baking the banana bread.
- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, white whole wheat flour, baking soda, cinnamon, and salt. Stir until evenly mixed.
- Combine Wet Ingredients: In a separate bowl, whisk together the mashed bananas, melted coconut oil, sugar, eggs, and plain Greek yogurt until the mixture is smooth and evenly blended.
- Combine Wet and Dry: Gradually add the dry ingredients into the wet ingredients, mixing just until all components are combined and no dry flour remains.
- Prepare Batter in Pan: Grease a loaf pan lightly, then pour the banana bread batter into it, smoothing the top with a spatula.
- Add Dulce de Leche Swirls: Drop tablespoons of dulce de leche over the batter’s surface. Using the tip of a spoon or a fork, gently swirl the dulce de leche into the batter to create marbled patterns.
- Bake the Bread: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean.
- Final Touch: After baking, remove the banana bread from the oven and allow it to cool slightly. Before serving, drizzle the remaining 1 tablespoon of dulce de leche over the top for added sweetness and visual appeal.
Notes
- Adapted from BuzzFeed Philippines.
- The riper the bananas, the sweeter and easier to mash, enhancing the bread’s flavor and texture.
- Use plain full-fat Greek yogurt for the best flavor and moistness; avoid flavored yogurts.
- Ensure baking soda is fresh to guarantee proper rise and texture.
- Store bread in an airtight container in the fridge for up to one week or on the counter for up to three days.
- You can freeze banana bread whole or sliced for up to three months; thaw before serving.
