Balsamic Dressing
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- ¼ cup honey
Salad
- 8 cups mixed salad greens
- ½ cup roasted salted pistachios, coarsely chopped
- ¾ cup dried figs, roughly chopped
- 4 ounces goat cheese
- Coarse kosher salt & freshly ground black pepper, to taste
Instructions
- Make the Dressing: Whisk together the olive oil, balsamic vinegar, and honey in a small bowl until well combined and smooth. Set aside to allow flavors to meld.
- Toss the Salad Greens: Place the mixed salad greens in a large serving bowl. Pour the prepared balsamic dressing over the greens and toss thoroughly to ensure even coating. Season with coarse kosher salt and freshly ground black pepper to taste.
- Add Toppings and Serve: Sprinkle the coarsely chopped roasted salted pistachios and roughly chopped dried figs evenly over the dressed salad. Crumble the goat cheese on top just before serving to maintain its creamy texture. Serve immediately to enjoy maximum freshness.
