Instructions

  1. Prepare the bread: Preheat the oven to 400°F. Slice the baguette into 4 equal sections, then cut each section horizontally to form sandwich halves.
  2. Sauté shallots: In a large skillet over medium heat, heat 1 tablespoon of olive oil for 1 minute. Add the chopped shallot and sauté for 2 minutes until soft and fragrant.
  3. Create roux and au jus: Sprinkle 1 tablespoon of all-purpose flour over the shallots and cook for 1 minute, stirring to create a roux. Slowly whisk in 10 ounces of beef consommé, bringing the mixture to a boil over high heat. Then reduce the heat to low and let it simmer gently.
