Ingredients
Scale
For the Compound Butter
- 3 tablespoons salted butter, softened
- 2 garlic cloves, minced
- 2 tablespoons fresh herbs (chives and parsley), chopped
- Salt and freshly ground black pepper, to taste
For the Salmon
- 3 salmon steaks, 1-inch thick each
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to season
- Lemon wedges, for serving
Instructions
- Prepare Compound Butter: In a small bowl, combine the softened butter, minced garlic, fresh herbs, salt, and black pepper. Mix well and set aside to allow flavors to meld.
- Dry and Season Salmon: Pat the salmon steaks dry thoroughly with paper towels to remove moisture. Season both sides generously with salt and freshly ground black pepper.
- Heat Skillet: Place a cast iron skillet over medium-high heat and add the olive oil. Allow the oil to heat until hot but not smoking.
- Sear Salmon: Place the salmon steaks in the hot skillet and sear undisturbed for 3-5 minutes on the first side. Carefully flip each steak once, then sear for another 3-5 minutes depending on thickness.
- Add Butter and Baste: After flipping, add the prepared garlic herb butter to the skillet. Spoon the melted butter continuously over the salmon as it finishes cooking, infusing it with rich flavor.
- Check Doneness and Serve: The salmon is done when the center becomes opaque and flakes easily with a fork. Remove from heat and serve with fresh lemon wedges to squeeze over the fish for brightness.
Notes
- Bringing the butter to room temperature makes it easier to mix with the garlic and herbs.
- Patting the salmon dry removes excess moisture, ensuring a better sear.
- Choose salmon steaks that are uniform in size and thickness for even cooking.
- Ensure the oil is hot before adding the salmon to achieve a perfect crust without sticking.
