Crust:
- 1 box devil’s food cake mix (not the kind with pudding added) or German chocolate cake mix
- 1/2 cup butter, melted
- 1 large egg
Filling:
- 1 (14 ounce) can sweetened condensed milk (fat free works well too)
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup chopped pecans
- 1 cup shredded coconut
- 1/2 cup milk chocolate chips
Instructions
- Preheat Oven: Preheat the oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking pan with non-stick cooking spray.
- Prepare Crust: In a medium bowl, combine the cake mix, melted butter, and egg until evenly mixed. Press this mixture evenly into the bottom of the prepared pan, keeping the crust from coming up the sides.
- Bake Crust: Bake the crust for 7 minutes. It will not look fully done at this stage. Remove the pan from the oven.
- Prepare Filling: While the crust is baking, mix together the sweetened condensed milk, vanilla extract, egg, chopped pecans, and shredded coconut in a separate bowl.
- Add Filling: Pour the filling mixture evenly over the warm crust. Sprinkle the milk chocolate chips evenly on top.
- Bake Bars: Return the pan to the oven and bake for 24-30 minutes, until the top is a light golden brown.
- Cool and Serve: Remove from the oven and let cool completely before cutting into squares and serving.
Notes
- Any chocolate cake mix will work, or you can use homemade cake mix with 3 1/2 cups of mix plus 2 tablespoons cocoa powder.
- For an extra decadent touch, drizzle a little caramel sauce over the top before serving.
- To freeze, place finished bars in an airtight freezer-safe container, individually wrapping or separating bars with parchment paper to prevent sticking.
