Ingredients
Scale
Crust
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
Cheesecake Filling
- 16 oz cream cheese, softened
- ½ cup Greek yogurt
- ½ cup honey
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup finely chopped pistachios
Topping
- ¼ cup honey for drizzling
- ¼ cup chopped pistachios for garnish
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cheesecake bars.
- Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until the mixture is well incorporated. Press this mixture evenly into the bottom of a greased 9×9 inch baking pan to form the crust.
- Bake the Crust: Bake the crust for 10 minutes to set it, then remove from the oven and allow it to cool completely.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Add Greek yogurt, honey, eggs, and vanilla extract, mixing thoroughly until the batter is fully combined and creamy.
- Add Pistachios: Gently fold in the finely chopped pistachios into the cheesecake filling, ensuring they are evenly distributed without overmixing.
- Assemble and Bake: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula. Bake for 25 to 30 minutes, or until the edges are set and the center remains slightly jiggly.
- Cool and Chill: Remove from the oven and allow the bars to cool to room temperature. Then refrigerate for at least 4 hours to set fully before slicing.
- Serve: Before serving, drizzle with honey and sprinkle with chopped pistachios for an elegant finishing touch.
Notes
