Instructions

  1. Prepare Ingredients: Chop the kimchi and dice the Spam into small cubes. Finely chop the onion and slice the green onions for garnish.
  2. Cook Spam: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced Spam and cook until lightly browned and crispy, about 3-4 minutes. Remove and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Sauté the chopped onions for 2 minutes until translucent, then add the chopped kimchi and cook for another 3-4 minutes to soften and caramelize it slightly.

  5. Add Spam and Finish: Return the browned Spam to the skillet, stir well to combine all ingredients, and cook for an additional 2-3 minutes until everything is heated through.
  6. Optional Fried Egg: In a separate small pan, fry the egg sunny side up or to your preference. This adds richness and creaminess when placed on top of the fried rice.
