  3. Truss the Chicken: Tie the chicken legs and wings with kitchen twine to ensure even cooking and maintain shape, or alternatively use a no-string method by tucking wings under the body and securing legs by crossing them.
  4. Season Chicken: Rub olive oil liberally over the entire surface of the chicken to promote crisp skin. Generously sprinkle with flaked sea salt and a pinch of freshly ground black pepper to season.
