Description

Marry Me Salmon is a rich and flavorful skillet dish featuring perfectly seared salmon fillets smothered in a creamy, garlicky Parmesan sauce with sun-dried tomatoes and fresh basil. This quick and elegant recipe offers a harmonious blend of spices and creamy textures, perfect for a comforting weeknight dinner or a special occasion, served alongside rice, pasta, or crusty bread.

Ingredients

Scale

Salmon

  • 4 medium salmon fillets, skinless
  • Kosher salt and black pepper to taste
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

Sauce

  • 1/2 cup white onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 3/4 cup grated Parmesan cheese
  • 1 tsp chili flakes
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tbsp fresh basil leaves, thinly sliced

Instructions

  1. Season the salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with kosher salt, black pepper, paprika, and garlic powder to build a well-balanced flavor base.
  2. Sear the salmon: Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets in the skillet and sear for 3 to 4 minutes on each side until they are golden brown on the outside and just cooked through. Remove the salmon from the skillet and set aside on a plate.
  3. Sauté aromatics: Reduce the skillet heat to medium. Add the unsalted butter and allow it to melt. Add the diced white onions and sauté for about 3 minutes until softened. Then add the minced garlic and cook for 30 seconds to 1 minute until fragrant but not browned.
  4. Make the sauce: Pour in the chicken broth to deglaze the pan, bringing it to a gentle simmer. Stir in the heavy cream, Dijon mustard, grated Parmesan cheese, and chili flakes. Season with salt and black pepper to taste. Cook the sauce for 2 to 3 minutes, stirring often, until it thickens slightly and becomes creamy.
  5. Add sun-dried tomatoes: Stir in the chopped sun-dried tomatoes and let the sauce simmer for another minute to meld the flavors.
  6. Finish the dish: Return the salmon fillets to the skillet and spoon the sauce over them. Simmer for 2 to 3 minutes just until the salmon is heated through and fully coated in the rich sauce.
  7. Garnish and serve: Sprinkle fresh basil slices over the salmon before serving. Pair this delicious dish with rice, pasta, mashed potatoes, or crusty bread to soak up the luscious sauce and enjoy immediately.

Notes

  • Fridge: Store cooled salmon leftovers and sauce in an airtight container in the fridge for up to 3 days.
  • Freezer: Freeze in a sealed container for up to 2 months.
  • Reheat: Warm gently in a skillet or microwave. Add a splash of cream or water if the sauce becomes too thick upon reheating.
