Instructions

  1. Prepare the Chicken: Cut each chicken breast in half lengthwise to create 4 smaller cutlets. Season both sides generously with salt, pepper, dried oregano, and garlic powder to infuse the meat with Mediterranean spices.
  2. Cook the Chicken: Heat olive oil in a skillet over medium-high heat until hot. Add the chicken cutlets and cook for 5 to 6 minutes per side until golden brown and fully cooked through (internal temperature should reach 165°F). Transfer cooked chicken to a plate and set aside.
  3. Make the Sauce: Lower the heat to medium and add minced garlic to the skillet, sautéing briefly until fragrant. Pour in the white wine or chicken broth, then add the halved tomatoes, Kalamata olives, and capers. Cook for 3 to 4 minutes until the tomatoes begin to soften but before the sauce thickens too much.
