- 4–6 cups lettuces, chopped

- 1 cup Kalamata olives

For the Dressing
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- Salt and fresh ground black pepper, to taste
Instructions
- Prepare the Salad: In a large salad bowl, combine the chopped lettuces, cherry tomatoes, diced red onion, chopped cucumber, Kalamata olives, feta cheese crumbles, and fresh parsley.
- Make the Dressing: In a mason jar or small bowl, add the freshly squeezed lemon juice and extra virgin olive oil. Add the minced garlic, salt, and fresh ground black pepper. Whisk or shake well to combine all ingredients thoroughly.
