Description

This fresh and vibrant Mediterranean Salad is a perfect light meal or side dish, combining crisp lettuces, juicy cherry tomatoes, tangy Kalamata olives, and creamy feta cheese, all tossed in a zesty lemon-garlic dressing. Easy to prepare and full of bright flavors, it’s a healthy and delicious choice for any occasion.

Ingredients

Scale

For the Salad

  • 46 cups lettuces, chopped
  • 1 cup cherry tomatoes, cut in half
  • ½ medium red onion, diced
  • 1 cup cucumber, chopped
  • 1 cup Kalamata olives
  • ¼ cup feta cheese, crumbled
  • Fresh parsley, chopped

For the Dressing

  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and fresh ground black pepper, to taste

Instructions

  1. Prepare the Salad: In a large salad bowl, combine the chopped lettuces, cherry tomatoes, diced red onion, chopped cucumber, Kalamata olives, feta cheese crumbles, and fresh parsley.
  2. Make the Dressing: In a mason jar or small bowl, add the freshly squeezed lemon juice and extra virgin olive oil. Add the minced garlic, salt, and fresh ground black pepper. Whisk or shake well to combine all ingredients thoroughly.
  3. Dress the Salad: Pour the dressing over the salad and toss well to ensure the vegetables are evenly coated with the dressing.
  4. Serve: Top the salad with additional feta cheese and parsley if desired. Serve immediately and enjoy the fresh flavors.

Notes

  • If your red onion is too spicy, soak it in cool water for 15 minutes before adding to the salad.
  • English cucumbers are preferred for this salad as they have fewer seeds, but any cucumber can be used.
  • Chop the produce into small pieces to ensure each bite has a balanced mix of ingredients.
  • Always use fresh lemon juice in the dressing for the best, brightest flavor.
  • For storing, keep the dressing separate from the salad to avoid sogginess. The salad can last up to 4 days in the fridge when stored properly.
