Instructions
- Heat the oil and sauté chicken and mushrooms: In a large enameled or heavy pot, heat 1 tablespoon of olive oil over medium-high heat. Add the cubed chicken breast, dried oregano, salt, black pepper, and sliced shiitake mushrooms. Cook, stirring occasionally, until the chicken is no longer pink and mushrooms are softened, about 3 to 4 minutes.
- Add pasta and broth, then cook: Add the uncooked linguini and 4 cups of low-sodium chicken broth to the pot. Bring the mixture to a boil, then cover and reduce the heat to medium-low. Simmer for 8 to 10 minutes or until the pasta is al dente and has absorbed some of the broth.
- Incorporate cheeses and cream: Stir in ¾ cup of parmesan cheese, ⅓ cup heavy cream, and ½ cup whipped cream cheese. Mix everything thoroughly until the sauce is smooth, creamy, and evenly coats the pasta and chicken.
