- 2 Tbsp reduced sodium chicken broth
- 1 cup unsweetened almond milk or skim milk (Fairlife fat free milk recommended)
- 2 Tbsp cornstarch
- 2 Tbsp non-fat plain Greek yogurt (strained or blended cottage cheese)
- 1 tsp Italian seasoning
- 1/3 cup Parmesan cheese, grated

- 1 Tbsp fresh parsley, chopped (optional)
Instructions
- Prepare Milk Mixture: In a small mixing bowl, combine unsweetened almond milk and cornstarch. Whisk until the cornstarch dissolves completely. Then whisk in the strained Greek yogurt until smooth. Set this mixture aside.
- Heat Oil: Heat the olive oil in a large deep skillet over medium-high heat for about 2 minutes until hot.
- Cook Shrimp: Add the raw shrimp to the skillet and season with salt and pepper. Sear the shrimp for 2-3 minutes on each side until they turn pink and are fully cooked through. Be careful not to overcook the shrimp, as they cook quickly and become opaque soon after turning pink. Remove shrimp and set aside on a plate.
- Sauté Garlic: In the same skillet, add the light butter and minced garlic. Sauté until fragrant, about 1-2 minutes, making sure the garlic doesn’t burn.
- Add Liquids and Seasonings: Pour in the reduced sodium chicken broth and the milk/cornstarch mixture. Add the Italian seasoning and whisk everything together to combine. Bring the sauce to a gentle simmer.
