- 1 tbsp soy sauce

- 1–2 tsp brown sugar
- 2 tsp sesame oil
- 1/2 tsp black pepper
Instructions
- Prepare the sauce: In a small bowl, combine soy sauce, Korean chili flakes (if using), brown sugar, sesame oil, and black pepper. Mix thoroughly and set aside to allow flavors to meld.
- Sauté onions: Heat oil in a skillet over medium-high heat. Add the sliced onions and cook until softened and slightly caramelized, about 4-5 minutes, stirring occasionally to prevent burning.
- Cook the beef: Add the thinly sliced beef to the skillet with the onions. Stir-fry together until the beef is browned and cooked through.
- Add kimchi and sauce: Mix in the chopped sour kimchi and continue to stir-fry for 2-3 minutes. Then add the sliced green chili (if using) and the prepared sauce. Cook everything together until well heated and flavors are combined, about 2 more minutes.
- Prepare the rolls: Slice the hoagie rolls in half. (Optional: Toast rolls on a griddle for extra warmth and flavor.)
- Assemble the sandwich: Place a piece of romaine lettuce (if using) on the bottom half of each roll. Spoon a generous serving of the bulgogi steak mixture over the lettuce. Top with slices of meltable cheese. The warmth of the filling will melt the cheese perfectly.
- Serve: Place the top halves of the rolls on the sandwiches and serve immediately while warm.
