Ingredients
Scale
Polenta
- Cooking spray
- 1 17-ounce tube polenta, cut into 8 (1/2-inch) slices
Toppings and Sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 8 teaspoons homemade tomato sauce
- 2 cups vertically sliced onions
- 1 tablespoon balsamic vinegar
- 2 ounces feta cheese, crumbled (about 1/4 cup)
- 1 tablespoon chopped fresh chives
Instructions
- Prepare Polenta: Warm up a skillet over medium heat and lightly coat both sides of the polenta slices with cooking spray. Add the polenta slices to the skillet and grill for about 5 minutes on each side or until they develop a light golden-brown crust.
- Sauté Garlic: In a separate large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for about 15 seconds until fragrant, being careful not to burn it.
- Cook Onions: Add the sliced onions to the skillet with garlic and continue sautéing until the onions start to soften and become tender.
- Glaze Onions: Reduce the heat to low, then add the balsamic vinegar to the onions. Cook for about 3 minutes, stirring frequently until the onions are well-coated and slightly caramelized.
- Assemble the Dish: Evenly spread the homemade tomato sauce over the grilled polenta slices, then top with the balsamic-glazed onions. Sprinkle crumbled feta cheese on top and garnish with fresh chopped chives before serving.
