Description

This flavorful polenta dish is topped with a rich homemade tomato sauce, balsamic-glazed onions, and crumbled feta cheese, garnished with fresh chives. Perfect as a light meal or an elegant appetizer, the polenta slices are pan-grilled to a crispy exterior, complemented by tender balsamic onions and tangy feta for a delightful combination of textures and flavors.

Ingredients

Scale

Polenta

  • Cooking spray
  • 1 17-ounce tube polenta, cut into 8 (1/2-inch) slices

Toppings and Sauce

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 8 teaspoons homemade tomato sauce
  • 2 cups vertically sliced onions
  • 1 tablespoon balsamic vinegar
  • 2 ounces feta cheese, crumbled (about 1/4 cup)
  • 1 tablespoon chopped fresh chives

Instructions

  1. Prepare Polenta: Warm up a skillet over medium heat and lightly coat both sides of the polenta slices with cooking spray. Add the polenta slices to the skillet and grill for about 5 minutes on each side or until they develop a light golden-brown crust.
  2. Sauté Garlic: In a separate large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for about 15 seconds until fragrant, being careful not to burn it.
  3. Cook Onions: Add the sliced onions to the skillet with garlic and continue sautéing until the onions start to soften and become tender.
  4. Glaze Onions: Reduce the heat to low, then add the balsamic vinegar to the onions. Cook for about 3 minutes, stirring frequently until the onions are well-coated and slightly caramelized.
  5. Assemble the Dish: Evenly spread the homemade tomato sauce over the grilled polenta slices, then top with the balsamic-glazed onions. Sprinkle crumbled feta cheese on top and garnish with fresh chopped chives before serving.

Notes

  • Feel free to use a store-bought tomato sauce if you’re short on time.
  • You can use any type of onions such as yellow, white, or sweet onions based on preference.
  • Pre-crumbled feta cheese can speed up the prep process.
  • To store leftovers, place them in an airtight container in the refrigerator for up to 3 days.
  • Reheat using a microwave or toaster oven for best results.
