  • 2 cups salsa verde chicken (or shredded rotisserie chicken mixed with 1/3 cup salsa verde)
  • 1 cup sour cream
  • 1 can (10 oz) Rotel (diced tomatoes and green chilies, undrained)
  • 1 teaspoon cumin
  • 1/81/4 teaspoon cayenne pepper
  • 1/2 teaspoon kosher salt
  • 8 small corn tortillas
  • 23 cups shredded cheese (cheddar/jack blend recommended)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the casserole.
  2. Prepare Mixture: In a large bowl, combine the salsa verde chicken, sour cream, undrained Rotel, cumin, cayenne pepper, and kosher salt. Stir thoroughly until all ingredients are evenly mixed.
  3. First Layer: Spread about 1/2 cup of the chicken mixture evenly on the bottom of a 4-quart or 8×8 inch baking dish.
  4. Add Tortillas: Place 4 corn tortillas on top of the mixture, tearing them as needed to cover the surface. Overlapping is fine to ensure full coverage.
  5. Second Layer: Spread half of the remaining chicken mixture over the tortillas, then sprinkle 1 cup of shredded cheese evenly on top.
  6. Repeat Layers: Add the remaining 4 tortillas on top, followed by the rest of the chicken mixture, then top with the remaining shredded cheese.
  7. Bake: Place the casserole in the preheated oven and bake for 25 minutes, or until the casserole is bubbly and the cheese has melted and is slightly golden.
  8. Rest and Serve: Remove the casserole from the oven and let it sit for 5 to 10 minutes to set before serving warm.

  • If you don’t have pre-made salsa verde chicken, substitute with 2 cups shredded rotisserie chicken mixed with 1/3 cup jarred salsa verde for the same great flavor.
