- 2 cups salsa verde chicken (or shredded rotisserie chicken mixed with 1/3 cup salsa verde)
- 1 cup sour cream
- 1 can (10 oz) Rotel (diced tomatoes and green chilies, undrained)
- 1 teaspoon cumin
- 1/8–1/4 teaspoon cayenne pepper
- 1/2 teaspoon kosher salt
- 8 small corn tortillas
- 2–3 cups shredded cheese (cheddar/jack blend recommended)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the casserole.
- Prepare Mixture: In a large bowl, combine the salsa verde chicken, sour cream, undrained Rotel, cumin, cayenne pepper, and kosher salt. Stir thoroughly until all ingredients are evenly mixed.
- First Layer: Spread about 1/2 cup of the chicken mixture evenly on the bottom of a 4-quart or 8×8 inch baking dish.
- Add Tortillas: Place 4 corn tortillas on top of the mixture, tearing them as needed to cover the surface. Overlapping is fine to ensure full coverage.
- Second Layer: Spread half of the remaining chicken mixture over the tortillas, then sprinkle 1 cup of shredded cheese evenly on top.
- Repeat Layers: Add the remaining 4 tortillas on top, followed by the rest of the chicken mixture, then top with the remaining shredded cheese.
- Bake: Place the casserole in the preheated oven and bake for 25 minutes, or until the casserole is bubbly and the cheese has melted and is slightly golden.
- Rest and Serve: Remove the casserole from the oven and let it sit for 5 to 10 minutes to set before serving warm.

- If you don’t have pre-made salsa verde chicken, substitute with 2 cups shredded rotisserie chicken mixed with 1/3 cup jarred salsa verde for the same great flavor.
- You can adjust the cayenne pepper amount based on your preferred spice level.
- Use a cheddar/jack cheese blend or any melting cheese of your choice for best results.
- Ripping tortillas to fit inside the dish ensures even layering and coverage.
