Ingredients
Scale
Seafood and Vegetables
- 1 1/2 lb large shrimp, peeled
- 1 bunch fresh asparagus
- 1 whole red onion, sliced
Seasonings and Extras
- 4 tbsp olive oil, divided
- 5 cloves garlic, minced
- 1/2 tbsp oregano
- 1/2 tbsp smoked paprika
- 1 tsp sea salt
- Ground black pepper, to taste
- 1 whole lemon, juiced
- 1 cup black olives, pitted
- 1 cup feta cheese
- 1/3 cup fresh cilantro or parsley
Instructions
- Preheat Oven: Preheat your oven to 450°F (232°C) to prepare for roasting the shrimp and vegetables.
- Season Shrimp: In a large bowl, combine the peeled large shrimp with 2 tablespoons of olive oil, minced garlic, sea salt, black pepper, smoked paprika, oregano, and the juice from one lemon. Toss to coat evenly.
- Prepare Asparagus: Trim and wash the asparagus thoroughly. Lay them flat on a large baking sheet and drizzle with 1 tablespoon of olive oil to season.
- Arrange on Baking Sheet: Place the seasoned shrimp evenly on top of the asparagus, then scatter sliced red onion over the shrimp.
- Bake: Place the sheet pan on the middle rack of the preheated oven. Bake for 10 minutes or until the shrimp edges begin to turn golden brown, indicating they are cooked through.
- Add Toppings: Remove the baking sheet from the oven and immediately top the shrimp and vegetables with black olives, crumbled feta cheese, and fresh cilantro or parsley. Drizzle with the remaining olive oil for added richness.
- Serve: Serve hot directly from the sheet pan for a simple and flavorful meal.
Notes
- If the shrimp appears pale after 10 minutes of baking, place the sheet pan under the broiler for 1-2 minutes until the shrimp edges turn golden brown.
- Ensure shrimp is peeled before seasoning for best flavor absorption.
- Can substitute fresh parsley if cilantro is not preferred.
- Adjust seasoning with additional salt and pepper if needed before serving.
