Ingredients
Scale
Vegetables and Herbs
- 32 ounces cherry tomatoes
- 1 large onion, sliced
- 6 peeled garlic cloves
- 1 cup fresh basil
Seasonings and Oils
- Salt to taste
- Black pepper to taste
- 1 tablespoon dried Italian seasoning
- 1 teaspoon dried oregano
- 1/2 cup good quality olive oil
- 2 tablespoons tomato paste
Pasta
- 16 ounces spaghetti, cooked according to package instructions
Optional Garnish
- Parmesan cheese shavings for garnish
Instructions
- Preheat and prepare vegetables. Preheat your oven to 400°F (204°C). On a large baking sheet, combine the cherry tomatoes, sliced onion, peeled garlic cloves, salt, black pepper, dried Italian seasoning, fresh basil, and dried oregano. Drizzle the olive oil over the mixture and toss everything together until the vegetables and herbs are well coated with oil and seasonings.
- Bake the vegetable mixture. Place the baking sheet in the preheated oven and bake for 30 to 35 minutes. Bake until the tomatoes burst, releasing their juices, and the garlic becomes tender. After baking, gently press down on the garlic cloves with a fork to help release their flavor into the dish.
- Toss in the cooked spaghetti and tomato paste. Remove the baking sheet from the oven and add the cooked spaghetti along with the tomato paste directly onto the baking sheet. Toss all the ingredients together thoroughly to combine the pasta with the roasted vegetable sauce evenly.
- Serve and garnish. Optionally, sprinkle Parmesan cheese shavings on top of the pasta for an extra savory touch. Serve warm and enjoy your easy, flavorful sheet pan spaghetti.
Notes
- Use high-quality olive oil for the best flavor.
- If you prefer a smoother sauce, mash the roasted tomatoes and garlic slightly before tossing with pasta.
- Fresh basil adds brightness; add some fresh basil leaves after baking for extra freshness.
- For a vegan version, omit Parmesan or use a plant-based alternative.
- Ensure the spaghetti is al dente to avoid overcooking when combined with the hot vegetables.
