  • 2 lbs boneless skinless chicken breast or thighs
  • 1 onion, thinly sliced
  • ¼ cup chicken broth
  • 1 lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  1. Prep: Place the chicken in the bottom of the slow cooker. Add the thinly sliced onion on top of the chicken to create a flavorful base layer.
  2. Mix: In a small bowl, whisk together chicken broth, lemon juice, garlic, olive oil, oregano, thyme, sea salt, and black pepper until well combined. Pour this mixture evenly over the chicken and onions in the slow cooker to infuse flavor throughout the cooking process.
  3. Cook: Cover the slow cooker with the lid and cook the chicken on LOW for 5-6 hours or on HIGH for 3-4 hours. The chicken is done when tender and reaches an internal temperature of 165°F (75°C).
  4. Shred: Once finished cooking, shred the chicken directly in the slow cooker using two forks. This allows the meat to soak up the delicious juices. Serve the chicken warm alongside rice, pasta, pita bread, or on top of a refreshing Greek salad.

Notes

  • If you don’t have chicken broth, you can omit it. The chicken will have fewer juices but will still be moist and flavorful.

  • While both chicken breast and thighs work well, thighs are preferred for extra tenderness and juiciness. Trim excess fat from thighs before cooking if desired.
