Instructions
- Cook the Bacon: Cut the bacon into small pieces using kitchen shears or a knife. Add the bacon pieces to a skillet and cook over medium-high heat until crispy. Once done, transfer the bacon to a paper towel-lined plate to drain excess fat, leaving the bacon fat in the pan for flavor.
- Sauté the Onion: Reduce the skillet heat to medium. Add the chopped onion to the bacon fat and sauté until the onion is softened and translucent, about 5-7 minutes.
- Add Garlic and White Wine: Stir in the minced garlic and white wine. Let the mixture bubble and simmer until the wine has reduced by half, enhancing the sauce’s depth of flavor.
- Create the Sauce: Add the double concentrated tomato paste, chicken broth, heavy cream, crushed red pepper flakes, and Italian seasoning to the skillet. Scrape up any browned bits stuck to the bottom of the pan and stir until the sauce is smooth and well combined.
- Cook the Gnocchi: Once the sauce begins to bubble, add the uncooked potato gnocchi directly into the sauce. Cook uncovered for about 10 minutes, stirring occasionally, until the gnocchi are tender and the sauce has thickened to your liking.
- Combine and Season: Stir the cooked bacon pieces and fresh basil into the sauce and gnocchi mixture. Adjust seasoning with salt and pepper as needed for taste.
- Serve: Serve immediately, topped with freshly grated parmesan cheese if desired, for an extra layer of savory richness.

- For a vegetarian version, omit bacon and substitute chicken broth with vegetable broth.
