Brownie Ingredients:
- 1 box strawberry cake mix

- 1 teaspoon vanilla extract
- ½ cup powdered sugar
- 1–2 tablespoons heavy cream
Strawberry Shortcake Crumble Ingredients:
- 20 Golden Oreos (about ½ standard package)
- 4 tablespoons salted butter, melted
- 4 tablespoons strawberry gelatin (the remaining amount)
Instructions
- Prepare Baking Dish: Preheat oven to 350°F. Line an 8×8 glass baking dish with parchment paper and spray with non-stick cooking spray to prevent sticking. Set aside.
- Make Brownie Batter: In a medium mixing bowl, combine ½ cup melted butter, eggs, strawberry cake mix, and 2 tablespoons strawberry gelatin. Stir until the batter is thick and evenly mixed.
- Bake Brownies: Use a rubber spatula to spread the thick batter evenly into the prepared baking dish. Bake for 25 minutes. Once done, remove from oven and allow to cool completely.
- Prepare Cream Cheese Frosting: In a bowl, beat together softened cream cheese, softened butter, and vanilla extract until smooth. Gradually add powdered sugar and heavy cream, and continue beating until the frosting is light, fluffy, and spreadable.
- Frost Brownies: Spread the cream cheese frosting evenly over the completely cooled brownies, creating a smooth layer.
- Make Strawberry Shortcake Crumble: In a food processor bowl, pulse Golden Oreos until broken into a mix of crumbs and larger chunks. Add the remaining 4 tablespoons of strawberry gelatin and drizzle with melted butter. Pulse a few more times until combined thoroughly but still chunky.
- Top and Serve: Sprinkle the crumble mixture evenly over the frosted brownies, pressing down gently into the frosting to adhere. Cut into squares and serve.

- Using a 9×13 baking dish will yield thinner brownies that require less baking time.
