Description

These Strawberry Cheesecake Brownies are a luscious fusion of moist strawberry cake brownies layered with creamy vanilla cream cheese frosting and topped with a sweet strawberry shortcake crumble. Perfectly fudgy with a burst of strawberry flavor, this dessert combines rich textures with a delightful fruity twist, making it an irresistible treat for any occasion.

Ingredients

Scale

Brownie Ingredients:

  • 1 box strawberry cake mix
  • ½ cup salted butter, melted
  • 2 large eggs
  • 2 tablespoons strawberry gelatin

Cream Cheese Frosting Ingredients:

  • 8 oz. block cream cheese, softened
  • ¼ cup salted butter, softened
  • 1 teaspoon vanilla extract
  • ½ cup powdered sugar
  • 12 tablespoons heavy cream

Strawberry Shortcake Crumble Ingredients:

  • 20 Golden Oreos (about ½ standard package)
  • 4 tablespoons salted butter, melted
  • 4 tablespoons strawberry gelatin (the remaining amount)

Instructions

  1. Prepare Baking Dish: Preheat oven to 350°F. Line an 8×8 glass baking dish with parchment paper and spray with non-stick cooking spray to prevent sticking. Set aside.
  2. Make Brownie Batter: In a medium mixing bowl, combine ½ cup melted butter, eggs, strawberry cake mix, and 2 tablespoons strawberry gelatin. Stir until the batter is thick and evenly mixed.
  3. Bake Brownies: Use a rubber spatula to spread the thick batter evenly into the prepared baking dish. Bake for 25 minutes. Once done, remove from oven and allow to cool completely.
  4. Prepare Cream Cheese Frosting: In a bowl, beat together softened cream cheese, softened butter, and vanilla extract until smooth. Gradually add powdered sugar and heavy cream, and continue beating until the frosting is light, fluffy, and spreadable.
  5. Frost Brownies: Spread the cream cheese frosting evenly over the completely cooled brownies, creating a smooth layer.
  6. Make Strawberry Shortcake Crumble: In a food processor bowl, pulse Golden Oreos until broken into a mix of crumbs and larger chunks. Add the remaining 4 tablespoons of strawberry gelatin and drizzle with melted butter. Pulse a few more times until combined thoroughly but still chunky.
  7. Top and Serve: Sprinkle the crumble mixture evenly over the frosted brownies, pressing down gently into the frosting to adhere. Cut into squares and serve.

Notes

  • Using a 9×13 baking dish will yield thinner brownies that require less baking time.
  • These brownies are rich, thick, and fudgy, with optimal serving size as 9 pieces of about 2.5”x2.5”. Alternatively, 16 smaller pieces are great for sharing with other desserts.
  • Incorporating strawberry gelatin into the batter enhances flavor and contributes to a chewier, fudgier brownie texture.
