Instructions

  1. Sauté the onion: Heat a deep skillet over medium heat and add the olive oil. Sauté the chopped onion for 5-7 minutes until softened and lightly browned, stirring occasionally to ensure even cooking.
  2. Add garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to let it burn.
  3. Combine sauce and gnocchi: Pour in the crushed tomatoes, chicken or vegetable broth, Italian seasoning, and crushed red pepper flakes if using. Add the uncooked potato gnocchi to the skillet. Stir everything together and cook uncovered, stirring frequently, for 6-7 minutes or until the gnocchi is tender and has softened. Adjust the heat as needed to maintain a gentle simmer.
  4. Finish with goat cheese and basil: Remove the skillet from heat and stir in the goat cheese until it melts into the sauce, creating a creamy texture. Add the fresh basil and season with salt and pepper to taste.
  5. Serve: Serve the gnocchi immediately, topped with freshly grated parmesan cheese if desired. Accompany with thick slices of fresh bread to soak up the delicious tomato and goat cheese sauce.
