Description

A classic and refreshing Tomato Bruschetta recipe featuring fresh diced tomatoes, garlic, basil, and olive oil served on toasted baguette slices. Optionally topped with Parmesan cheese and a tangy balsamic reduction for extra flavor. Perfect as an appetizer or light snack.

Ingredients

Scale

Bruschetta Mixture

  • 6 Roma tomatoes, diced
  • 1/2 cup red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 12 teaspoons balsamic vinegar, to taste
  • 1/4 teaspoon coarse kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Parmesan cheese, grated (optional)

Breads

  • 1 French baguette, sliced into 1/2-inch slices

Balsamic Reduction (Optional)

  • 1/2 cup balsamic vinegar

Instructions

  1. Prepare the Tomato Mixture: In a large bowl, combine the diced Roma tomatoes, chopped red onion, minced garlic, chopped fresh basil, olive oil, 1-2 teaspoons of balsamic vinegar, coarse kosher salt, and black pepper. Stir gently to combine all ingredients evenly. If desired, sprinkle grated Parmesan cheese on top and mix lightly.
  2. Toast the Baguette Slices: Preheat your broiler or grill to high heat. Arrange the sliced baguette pieces in a single layer and toast each side until lightly browned and crisp, about 1-2 minutes per side. Watch carefully to avoid burning.
  3. Make the Balsamic Reduction (Optional): In a small saucepan over medium heat, bring 1/2 cup of balsamic vinegar to a boil. Reduce the heat to medium-low and let it simmer until the liquid reduces by half and thickens slightly, about 5 minutes. Remove from heat and allow it to cool; it will continue to thicken as it cools.
  4. Assemble and Serve: Serve the tomato bruschetta mixture alongside the toasted baguette slices so guests can add the topping themselves to avoid sogginess. Alternatively, spoon the tomato mixture onto each toast and drizzle with the balsamic reduction if using. Serve immediately for the best flavor and texture.

Notes

  • Leftover bruschetta mixture can be stored in an airtight container in the refrigerator for 1-2 days but is best enjoyed fresh.
  • To prevent soggy toasts, serve the tomato mixture separately from the toasted baguette slices and assemble just before eating.
  • The balsamic reduction adds sweetness and tang but is optional depending on your taste preference.
  • You can substitute the French baguette with ciabatta or any crusty bread you prefer.
