Ingredients
Scale
Granola Cups
- 1 1/2 cups old-fashioned oats
- 3/4 cup peanut butter (smooth or crunchy)
- 3 Tablespoons maple syrup
Filling
- 2 cups vanilla yogurt
- Fresh raspberries or your favorite berries
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the granola cups.
- Make the Oat Cups: In a large bowl, mix together the old-fashioned oats, peanut butter, and maple syrup until fully combined. The mixture should be slightly sticky but not too wet, perfect for holding shape.
- Form the Oat Cups: Divide the oat mixture evenly into 6 greased muffin cups. Press down gently with the bottom of a small glass or your fingers to create a cup shape that will hold the filling.
- Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes until the edges turn golden and the cups feel firm to the touch, ensuring they hold their shape.
- Cool: Allow the oat cups to cool completely in the muffin tin before removing them to maintain their structure and prevent crumbling.
- Assemble: Once cooled, fill each granola cup with approximately 1/4 cup of vanilla yogurt. Top with fresh raspberries or your choice of berries and, if desired, add a small dollop of reserved peanut butter for extra flavor.
- Serve or Store: Enjoy immediately, or refrigerate the assembled granola cups for a chilled, refreshing treat later.
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- You can use any type of berries according to your preference.
- To make the cups sweeter, drizzle additional maple syrup on top of the yogurt filling.
- Store assembled cups in the refrigerator and consume within 2 days for optimal freshness.
- The oat cups can be made ahead and stored separately in an airtight container for up to 3 days.
