- ½ teaspoon salt
- 5–10 dashes hot sauce

Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s ready for baking the egg mixture.
- Sauté Vegetables: Heat olive oil in a pan over medium heat. Add diced red bell pepper and yellow onion, cooking for 5-8 minutes until they start to soften.
- Add Spinach: Stir in the spinach and sauté until it wilts completely. Then turn off the heat and set the vegetables aside.
- Prepare Egg Mixture: Crack all 12 eggs into a large bowl and whisk them together thoroughly. Add the cottage cheese, sautéed vegetables, garlic powder, salt, hot sauce, and black pepper, then whisk until all ingredients are well combined.
- Prepare Baking Pan: Spray a 9×13 inch baking pan with non-stick cooking spray to prevent sticking.
- Pour and Bake: Pour the egg mixture evenly into the prepared pan and place it in the preheated oven. Bake for 40-45 minutes until the egg bake is set.
- Cool and Set: Remove from the oven and allow to cool for 10-15 minutes so it finishes setting. Pat the surface dry with a paper towel to remove any excess moisture.
- Serve: Sprinkle the top with sliced chives, cut into 12 portions, and serve warm.
