Description

This Easy Boursin Chicken recipe features tender, juicy chicken breasts cooked to perfection and topped with a creamy, garlic and herb Boursin cheese sauce infused with fresh spinach.   • 2 teaspoons kosher salt
  • 2 teaspoons black pepper
  • 1 tablespoon olive oil

Sauce

  • ½ cup chicken stock
  • 1 5.2 ounce package Garlic & Fine Herbs Boursin Cheese
  • 2 cups chopped spinach

Instructions

  1. Prep The Chicken: Season both sides of the chicken breasts with kosher salt and black pepper. For even cooking, pound the chicken breasts to a uniform thickness if needed.
  2. Cook The Chicken: Heat a cast iron skillet over medium heat. Add the olive oil once the skillet is warm. Cook the chicken breasts for 5-8 minutes on each side until golden brown and an internal temperature of 165ºF is reached. Transfer the cooked chicken to a plate and set aside.
  3. Make The Sauce: Using the same skillet, pour in the chicken stock. Add the Boursin cheese, breaking it apart with a spoon. Stir continuously until the cheese melts completely and scrape up any brown bits from the pan bottom. Add the chopped spinach and toss gently to wilt it. Turn off the heat and place the chicken back in the skillet to warm in the sauce.
  4. Serving: Serve the chicken warm, drizzled with the creamy Boursin spinach sauce, alongside your favorite sides like mashed potatoes or roasted vegetables.
