Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 1 tablespoon olive oil
Sauce
- ½ cup chicken stock
- 1 5.2 ounce package Garlic & Fine Herbs Boursin Cheese
- 2 cups chopped spinach
Instructions
- Prep The Chicken: Season both sides of the chicken breasts with kosher salt and black pepper. For even cooking, pound the chicken breasts to a uniform thickness if needed.
- Cook The Chicken: Heat a cast iron skillet over medium heat. Add the olive oil once the skillet is warm. Cook the chicken breasts for 5-8 minutes on each side until golden brown and an internal temperature of 165ºF is reached. Transfer the cooked chicken to a plate and set aside.
- Make The Sauce: Using the same skillet, pour in the chicken stock. Add the Boursin cheese, breaking it apart with a spoon. Stir continuously until the cheese melts completely and scrape up any brown bits from the pan bottom. Add the chopped spinach and toss gently to wilt it. Turn off the heat and place the chicken back in the skillet to warm in the sauce.
- Serving: Serve the chicken warm, drizzled with the creamy Boursin spinach sauce, alongside your favorite sides like mashed potatoes or roasted vegetables.
Notes
- Chicken: Chicken thighs can be substituted for breasts. For thick breasts, butterfly to ensure even and quicker cooking.
- Boursin: The Garlic & Fine Herbs variety is preferred, but Shallot & Chive works well too.
- Dairy-Free Option: Try a dairy-free Boursin alternative; success may vary, so check reader comments for tips.
- Spinach: Fresh spinach is best, but frozen spinach thawed and squeezed dry can be used. Kale can be a substitute or omit leafy greens altogether.
- Serving Suggestions: Serve with mashed or cauliflower mash and roasted broccoli or green beans for a balanced meal.
- Storage: Refrigerate leftovers up to 5 days or freeze in airtight containers for up to 6 months.
- Reheating: Microwave thawed leftovers for 3-5 minutes or frozen for 6-10 minutes. Oven reheat at 350ºF for 10-15 minutes until bubbling.
