- 1 tbsp olive oil
- 1 lb ground turkey
- 2 lbs cabbage, coarsely chopped
- 1 cup homemade tomato sauce or your favorite tomato sauce
- 1/2 cup vegetable broth
- Salt and pepper, to taste
- 1 cup frozen peas
- ½ cup shredded mozzarella cheese
- Fresh parsley, for garnishing

- Heat the olive oil: In a cast iron skillet over medium heat, add 1 tablespoon of olive oil and allow it to warm up before adding other ingredients.
- Sauté the onion: Add the chopped onion to the skillet and cook until golden brown, stirring occasionally to ensure even cooking.
- Cook the ground turkey: Add 1 pound of ground turkey to the skillet, breaking it into small pieces. Cook for about 10 minutes, stirring occasionally until fully browned.
- Add the cabbage: Stir in 2 pounds of coarsely chopped cabbage. Cook for about 5 minutes, stirring well to combine the vegetables and turkey.
- Incorporate tomato sauce and broth: Pour in 1 cup of tomato sauce and ½ cup of vegetable broth. Season with salt and pepper to taste. Mix all the ingredients thoroughly.
- Simmer the mixture: Allow the skillet contents to cook for 7 minutes so the flavors meld and the cabbage softens further.
- Add frozen peas: Stir in 1 cup of frozen peas and cook for an additional 2 minutes to heat through.
- Melt the cheese: Sprinkle ½ cup shredded mozzarella cheese on top. Cover the skillet to melt the cheese, which should take about 1 to 2 minutes.
- Serve: Remove the skillet from heat and garnish with fresh parsley. Serve warm immediately.
Notes
- It’s fine to use a large non-stick skillet if you do not have a cast-iron skillet.
- If possible, use low sodium broth and salt to taste.
