Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it reaches the correct temperature before baking the casserole.
  2. Make the Teriyaki Sauce: In a medium saucepan, combine 3/4 cup soy sauce, 3/4 cup brown sugar, 1/2 cup apple cider vinegar, minced garlic cloves, 1/2 teaspoon ginger, and 1/4 teaspoon pepper. In a small bowl, whisk together 1 tablespoon cornstarch and 1 tablespoon water until smooth. Slowly add this mixture to the saucepan, whisking continuously. Bring the sauce to a boil over medium-high heat, then reduce heat and simmer for 3-5 minutes until the sauce thickens slightly.
  3. Bake the Chicken: Place 2 chicken breasts in a 9×13 inch casserole dish. Pour half of the prepared teriyaki sauce over the chicken. Bake in the preheated oven for about 25 minutes or until the chicken is fully cooked and no longer pink inside.
  4. Shred the Chicken: Remove the casserole dish from the oven and shred the cooked chicken breasts using two forks for an even texture throughout the casserole.
