Ingredients
Scale
Chicken and Seasoning
- 2 lbs chicken tenders (boneless chicken breasts or thighs can be substituted)
- 4–5 tablespoons oil (for marinade and cooking chicken)
- 2 tablespoons smoked paprika (or regular paprika)
- 1 tablespoon cayenne pepper
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
Slider Assembly
- 1 pack Hawaiian slider buns or dinner rolls
- Mayonnaise, to taste
- Sweet Baby Ray’s Golden Mustard (or honey mustard as a substitute)
- 8 strips bacon, cooked crisp
- Colby jack cheese, enough slices for the sandwiches (approximately 8 slices)
- 1/2 head lettuce
- 1/2 small red onion, sliced thin
- 2 Roma tomatoes, sliced thin
Butter Topping
- 1/2 stick butter, softened (4 tablespoons)
- 1 tablespoon fresh parsley, chopped
- 2 cloves garlic, minced
Instructions
- Marinate the Chicken: Place chicken tenders into a large zip-top bag or bowl. Add several tablespoons of the blackened seasoning mix and a few tablespoons of oil. Mix thoroughly to coat all pieces evenly, ensuring the chicken is well seasoned on all sides.
- Cook the Chicken: Heat an oiled skillet over medium-high heat or prepare a grill. Cook the chicken tenders about 3 minutes per side, flipping only once, until fully cooked through and nicely seared.
- Prepare Butter Topping: While the chicken cooks, combine softened butter, chopped parsley, and minced garlic in a small bowl. Microwave for about 30 seconds until melted, then stir well to blend the flavors.
- Toast Slider Buns: If slider buns are not pre-sliced, carefully slice them horizontally with a serrated knife. Place the bottom buns cut side up on a baking sheet and toast under the broiler for a few minutes until golden brown. Leave the top buns beside them with domed side facing up.
- Assemble Sliders – Part 1: Spread a squeeze of mayonnaise on each bottom bun. Layer each bun evenly with cooked chicken tenders, followed by a generous dollop of the golden honey mustard sauce. Add a slice of colby jack cheese on top of the chicken and mustard.
- Broil to Melt Cheese and Toast Tops: Spread the garlic-parsley butter mixture on the top buns. Return the baking sheet to the broiler for 1-2 minutes, or until the cheese softens and the top buns are slightly toasted.
- Finish Assembling Sliders: Top the melted cheese layer with crispy bacon strips, thin tomato slices, red onion slices, lettuce leaves, and an additional drizzle of honey mustard. Place the buttered top buns over the stacked ingredients.
- Serve: Slice the slider sandwiches to separate them if desired, then serve immediately while warm and flavorful.
Notes
- Substitute boneless chicken breasts or thighs for tenders as needed.
- Adjust cayenne pepper amount for desired spice level.
- For an easier cleanup, cook chicken using a grill pan or outdoor grill.
- Butter topping can be made ahead and refrigerated until use.
- Broil slider buns carefully to avoid burning, as broilers vary in heat intensity.
- Use Hawaiian slider buns for the signature sweet and soft texture; dinner rolls also work well if unavailable.
