Description

These Lemon Brownies are bright, sweet, and irresistibly delicious with a perfect balance of tangy lemon and rich, moist texture. Enhanced with white chocolate chips and a zesty lemon glaze, they make a refreshing twist on traditional brownies, ideal for any dessert lover seeking a citrusy indulgence.

Ingredients

Scale

Brownies

  • ¼ cup salted butter, melted
  • ¼ cup vegetable oil
  • ¾ cup (150g) granulated sugar
  • 2 large eggs + 1 large egg yolk
  • 1 tablespoon lemon zest (from 1 large lemon)
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (141g) all-purpose flour
  • 2 teaspoons cornstarch
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup white chocolate chips (optional)

Glaze

  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, creating a sling for easy removal of the brownies.
  2. Mix wet ingredients: In a large mixing bowl, whisk together melted butter, vegetable oil, granulated sugar, eggs, the additional egg yolk, lemon zest, lemon juice, and vanilla extract until well combined and smooth.
  3. Add dry ingredients: To the wet mixture, add the all-purpose flour, cornstarch, baking powder, and salt. Stir gently just until the flour is incorporated to avoid overmixing. Fold in the white chocolate chips, if using.
  4. Bake the brownies: Pour the batter evenly into the prepared baking pan. Place in the preheated oven and bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
  5. Cool: Remove the pan from the oven and let the brownies cool in the pan for about 30 minutes to room temperature.
  6. Prepare the glaze: While brownies are cooling, whisk together powdered sugar, fresh lemon juice, and lemon zest in a small bowl until smooth and pourable.
  7. Glaze and chill: Once cooled, spread the glaze evenly over the brownies. Refrigerate the coated brownies for 1 to 2 hours until the glaze is set and the bars are chilled.
  8. Serve: Slice into squares and serve chilled or at room temperature. Enjoy the bright, luscious lemon flavor accented by creamy white chocolate chips.

Notes

  • Storage: Store brownies in an airtight container at room temperature for up to 3 days. For longer freshness, refrigerate for up to one week.
  • The recipe is adapted from Mel’s Kitchen Cafe.
  • Do not overmix the batter to keep the brownies tender and moist.
  • Optional white chocolate chips add extra sweetness and complement the lemon flavor beautifully.
  • Make sure to zest the lemon before juicing to get the most fresh lemon flavor!
