- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, creating a sling for easy removal of the brownies.
- Mix wet ingredients: In a large mixing bowl, whisk together melted butter, vegetable oil, granulated sugar, eggs, the additional egg yolk, lemon zest, lemon juice, and vanilla extract until well combined and smooth.
- Add dry ingredients: To the wet mixture, add the all-purpose flour, cornstarch, baking powder, and salt. Stir gently just until the flour is incorporated to avoid overmixing. Fold in the white chocolate chips, if using.
- Bake the brownies: Pour the batter evenly into the prepared baking pan. Place in the preheated oven and bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
