Description

Mongolian Ground Beef Noodles is a quick, savory dish combining tender ground beef cooked with aromatic ginger and garlic, tossed with soft rice noodles in a rich, sweet soy-based sauce. Garnished with fresh green onions and sesame seeds, this comforting Asian-inspired meal is perfect for a speedy weeknight dinner.

Ingredients

Scale

Noodles

  • 10 ounces (284 g) rice noodles

Beef Mixture

  • 1 pound (454 g) ground beef, 80/20
  • 1 teaspoon fresh ginger, finely minced
  • 4 garlic cloves, finely minced

Sauce

  • ½ cup (118 ml) low-sodium soy sauce
  • 2 tablespoons dark soy sauce
  • ½ cup (118 ml) water
  • ¼ cup (55 g) brown sugar
  • 3 tablespoons cornstarch

Garnish

  • Green onions, sliced
  • White sesame seeds

Instructions

  1. Prepare the Sauce: In a bowl, whisk together low-sodium soy sauce, dark soy sauce, water, brown sugar, and cornstarch until smooth. Set the sauce mixture aside to be used later.
  2. Cook the Rice Noodles: Prepare the rice noodles according to the package instructions. Once cooked, drain and set them aside while you prepare the beef.
  3. Brown the Ground Beef: Heat a little cooking oil in a large wok or skillet over medium-high heat. Add the ground beef and break it into smaller pieces with a wooden spoon or spatula. Cook until the meat is mostly browned and no longer pink.
  4. Add Aromatics: Stir in the minced fresh ginger and garlic with the cooked beef. Continue to cook for about 2-3 minutes, until the mixture becomes fragrant.
  5. Simmer with Sauce: Pour the prepared sauce over the beef mixture. Let it gently simmer for 3-4 minutes, stirring occasionally, until the sauce thickens and coats the beef well.
  6. Toss with Noodles: Add the cooked rice noodles on top of the beef and sauce mixture. Toss everything together thoroughly to ensure the noodles are evenly coated with the thickened sauce.
  7. Garnish and Serve: Sprinkle sliced green onions and white sesame seeds on top as garnish. Serve immediately for best flavor and texture.

Notes

  • Use 80/20 ground beef for optimal flavor and moisture.
  • Rice noodles vary by thickness; adjust cooking time per package instructions to avoid overcooking.
  • Dark soy sauce adds depth and color, but if unavailable, use regular soy sauce with a bit of molasses or brown sugar.
  • For a spicier kick, add some chili flakes or sriracha during the simmering step.
  • Leftovers keep well for up to 2 days refrigerated but are best enjoyed fresh.
