- 2 tablespoons dark soy sauce
- ½ cup (118 ml) water
- ¼ cup (55 g) brown sugar
- 3 tablespoons cornstarch

Instructions
- Prepare the Sauce: In a bowl, whisk together low-sodium soy sauce, dark soy sauce, water, brown sugar, and cornstarch until smooth. Set the sauce mixture aside to be used later.
- Cook the Rice Noodles: Prepare the rice noodles according to the package instructions. Once cooked, drain and set them aside while you prepare the beef.
- Brown the Ground Beef: Heat a little cooking oil in a large wok or skillet over medium-high heat. Add the ground beef and break it into smaller pieces with a wooden spoon or spatula. Cook until the meat is mostly browned and no longer pink.
- Add Aromatics: Stir in the minced fresh ginger and garlic with the cooked beef. Continue to cook for about 2-3 minutes, until the mixture becomes fragrant.
- Simmer with Sauce: Pour the prepared sauce over the beef mixture. Let it gently simmer for 3-4 minutes, stirring occasionally, until the sauce thickens and coats the beef well.
- Toss with Noodles: Add the cooked rice noodles on top of the beef and sauce mixture. Toss everything together thoroughly to ensure the noodles are evenly coated with the thickened sauce.
