- Season the Chicken: Start by seasoning both sides of the chicken breasts with salt and black pepper. This adds flavor to the chicken right from the start.
- Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Cook them for about 5-7 minutes on each side until they are golden brown and cooked through. When done, remove the chicken from the skillet and let it rest on a plate.
- Sauté the Onion and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Toss in the chopped onion and sauté for about 3 minutes until it becomes translucent. Then, add the minced garlic and cook it for another minute until fragrant.

- Cook the Orzo: Pour in the chicken broth and bring the mixture to a boil. Then, reduce the heat to low, cover the skillet, and let it simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed.
- Add the Finishing Touches: Once the orzo is ready, stir in the butter, lemon zest, lemon juice, and chopped parsley. Adjust the seasoning with salt and pepper to your taste. If you love cheese, now is the time to stir in that grated Parmesan!
