- 2 cups coconut milk, divided

For the Strawberry Purée:
- 1 cup fresh strawberries
- 2 tablespoons water
- 1 tablespoon strawberry preserves
Instructions
- Prepare the Chia Pudding: In two separate 10-12 ounce containers, add ¼ cup chia seeds, 1 cup coconut milk, and maple syrup to taste. Whisk well to combine the ingredients evenly.
- Make the Strawberry Purée: In a blender, combine the fresh strawberries, water, and strawberry preserves. Pulse until the mixture is smooth and well blended.
- Assemble the Pudding: Pour half of the strawberry purée over each chia pudding container, spreading it evenly on top of the mixture.
- Chill the Pudding: Refrigerate the assembled chia puddings for at least 3 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
