Ingredients
Scale
Vegetables
- ½ medium head of cabbage
- 1 medium onion
- 2 garlic cloves, minced
Proteins & Dairy
- 4–5 slices bacon, chopped
- ½ cup heavy cream
- ¼ cup Parmesan cheese, freshly grated
Seasonings & Others
- Olive oil, for roasting
- ¼ tsp black pepper
- Salt, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the cabbage.
- Prepare the Cabbage: Slice the cabbage into long, thin strips resembling wide noodles, aiming for about 5 to 6 cups. Place on a large baking sheet, drizzle with olive oil, sprinkle with salt, and toss to coat evenly before spreading it out in a single layer.
- Roast the Cabbage: Roast the cabbage in the preheated oven for 10 to 15 minutes until it softens slightly and the edges become lightly browned, retaining a chewy texture similar to pasta.
- Cook the Bacon: While the cabbage roasts, heat a large pan over medium heat. Add the chopped bacon and cook for 2 to 3 minutes until it crisps and releases its flavorful fat.
- Sauté Onion and Garlic: Add the chopped onion to the bacon and cook for another 2 to 3 minutes, stirring often, until the onion is soft and translucent. Then stir in the minced garlic and cook for about 30 seconds until fragrant.
- Make the Creamy Sauce: Pour in the heavy cream and add the Parmesan cheese and black pepper. Stir well to combine and let the sauce simmer gently for 2 to 3 minutes until it slightly thickens.
- Toss Cabbage in Sauce: Add the roasted cabbage to the pan and toss everything together until the cabbage is evenly coated in the creamy sauce. Taste and season with additional salt or pepper if necessary.
- Serve: Serve the cabbage carbonara hot and enjoy this comforting, creamy dish immediately.
Notes
- Do not overcook the cabbage to maintain its chewy, pasta-like texture.
- If the sauce is too thick, add a splash of cream or water to loosen it.
- Using freshly grated Parmesan cheese ensures the smoothest and creamiest sauce.
